The Kjeldahl method is a traditional but versatile nitrogen determination method that can be used for food and feed industry samples (cereal, meat, fish, milk, dairy products, fruit and vegetables), beverages, environmental analytical samples (agricultural, soil, fertilizer, water and wastewater ), for the analysis of chemical and pharmaceutical samples as well as other industrial samples (paper, textile, rubber, plastic and polymer). Kjeldahl nitrogen (TKN) is a frequently checked parameter in the field of wastewater treatment, but Kjeldahl analysis is also used to determine the crude protein content of food industry samples.
Kjeldahl nitrogen is the sum of the organic nitrogen, ammonia (NH3) and ammonium ion (NH4+) content of the sample. Total nitrogen is the sum of Kjeldahl nitrogen and nitrite (NO2-) and nitrate (NO3-) ions.

In addition to Kjeldahl distillation, Velp's steam stills can also be used to determine the content of nitrite, phenol, volatile acids, cyanides, and alcohol.
The UDK 169 Kjeldahl distillation apparatus is a stand-alone nitrogen/protein determiner. However, this type can be supplemented with a 24-slot sample changer, with the help of which the serial (mass) determination of N/protein can be performed without user intervention.
